A Taste of India

On January 24th, SOS had the pleasure of welcoming Chef Pietro from the Hyatt Shor American Seafood Grill once again, this time accompanied by Culinary Intern Rebecca, for another monthly cooking class at the Callahan Community Kitchen. Culinary Intern, Rebecca, shared a piece of her culture and made Chicken Biryani –a staple Indian dish layered with basmati rice, chicken stew, onions, mint and cilantro. The dish featured a masala spice blend of whole herbs such as coriander seeds, cinnamon bark, mace, and green and black cardamon, that became fragrant after being toasted and was used to marinate the chicken to complete the dish. In addition to a fantastic cooking demonstration, Culinary Intern Rebecca provided a rich history of Biryani, including how different regions of India have adopted their own version of the staple dish. Class participants were also encouraged to enjoy the dish the traditional Indian way of eating it with your hands. We are so grateful for both Chef Pietro and Culinary Intern Rebecca sharing their culinary knowledge and their continued support of SOS! We are looking forward to working with them again in the future.
