Fresh, Flavorful, and Fun: Inside Our Vietnamese Spring Roll Cooking Class with JoEllen Hothem

On Wednesday, April 8th, Chef JoEllen hosted a hands-on adult cooking class at our SOS Callahan Community Kitchen, and it was truly one of our best yet!
With 15 participants in attendance, the kitchen was full of energy as we learned how to make fresh, homemade Vietnamese spring rolls using a variety of vibrant ingredients like cabbage, carrots, cucumbers, herbs, avocado, tofu, and jalapeño. Chef JoEllen even prepared her own signature peanut dipping sauce and a flavorful oil to drizzle over the rolls... Absolutely delicious!
Beyond the great flavors, this class was incredibly insightful. We learned just how simple and quick these spring rolls can be to prepare, making them a perfect option for a healthy snack or meal on the go. They’re easy to make in bulk and packed with fresh, wholesome ingredients—something everyone is always looking for!
We are so grateful we got to spend time with Chef JoEllen during her visit to the Keys this month. Thank you for sharing your knowledge, passion, and creativity with us—we can’t wait to welcome you back next time you’re in town!
